After the solids composition is adjusted, stabilizers are added and the milk is pasteurized. The milk is fermented to produce yogurt by use of starter cultures that contain strains (S. thermophilus, Lb. delbruecki subsp. bulgaricus or both).
Two kinds of yogurt are mainly available on the market. Set yogurt, is incubated and cooled in the retail container. Stirred yoghurt, is fermented in a tank and the final coagulum is "broken" by stirring prior to cooling and packing. The texture of a stirred yoghurt will be less firm than a set yoghurt somewhat like a very thick cream.
