1. Raw milk is collected from farms and taken to dairies by tanker for processing. On arrival, a series of tests are carried out relating to the com positional and hygienic quality of the milk. Subject to the satisfactory completion of the tests， the milk in the tanker is then unloaded into a silo and cool down to a tem perature Of 6°C or less prior to being processed into heat treated drinking milks.
2. In pasteurizing system, raw milk flows from the storage tanks into a balance tank. From here the milk is pumped to the regenerative section of the heat exchanger. After the pasteurization, the milk can then be passed through a centrifugal separation process and standardization unit where the fat content may be adjusted to produce standardized milk and skimmed milk.
3. Homogenization breaks up the fat globules in the milk by forcing them through a fine aperture, allowing the cream to be mixed evenly through-out the milk. The hom ogeniser is typically placed upstream before the final heat treat- ment in a pasteurisation plant or indirect UHT milk plant.
